Lemon Chiffon Cake

 

Ingredients

Cake

2  cups all-purpose flour                        
1 1/2 cups granulated sugar                        
3 teaspoons baking powder                        
1 teaspoon salt                        
3/4  cup cold water                        
1/2  cup vegetable oil                        
2 teaspoons vanilla                        
2 teaspoons grated lemon peel                        
7 egg yolks                        
1 cup egg whites (8 eggs)                        
1/2 teaspoon cream of tartar                        

Lemon Glaze

1/3 cup butter or margarine                        
2 cups powdered sugar                        
1/2 teaspoon grated lemon peel                        
2 to 4 tablespoons hot lemon juice 
 
Directions
  • 1 Move oven rack to lowest position. Heat oven to 325°F. In large bowl, mix flour, sugar, baking powder and salt. Beat in cold water, oil, vanilla, lemon peel and egg yolks until smooth.
  • 2 In large bowl, beat egg whites and cream of tartar with electric mixer on high speed until stiff peaks form. Gradually pour egg yolk mixture over beaten egg whites, folding with rubber spatula just until blended. Pour into ungreased 10-inch angel food (tube) cake pan.
  • 3 Bake about 1 hour 15 minutes or until top springs back when touched lightly. Immediately turn pan upside down onto heatproof funnel or bottle. Let hang until completely cool, about 2 hours. Loosen side of cake with knife or long, metal spatula; remove from pan.
  • 4 In 1 1/2-quart saucepan, melt butter over low heat; remove from heat. Stir in powdered sugar and lemon peel until smooth. Stir in lemon juice, 1 tablespoon at a time, until smooth and consistency of thick syrup. Spread glaze over top of cake, allowing some to drizzle down side.

Expert Tips

-Rise to the occasion! If using self-rising flour, there is no need to add baking powder and salt.
 
-Be sure not to get any egg yolks into the egg whites while separating the eggs, because even a speck of yolk will prevent the whites from beating properly.

Date And Coffee Cake















Ingredients :
Butter-100 gms
Sugar-50 gms
Eggs-2
Coffee-3 Tbsp
All Purpose-Flour 100 gms
Vanilla Essance-1 Tsp
Dates-100 gms
[You Can Add Up To 100 gms of Sugar....I Like My Cake Lighly Sweetned]

Method:

- Pit the dates and soak them in hot water 
- Mix the butter and sugar together in a bowl with your hands [ the butter has to be at room temprature for
  this]
- Add the eggs one at a time to the butter and sugar mixture and beat well
- Add the ground coffee and sift in the flour
- Add the vanilla essance
- Drain the water from the dates ad fold them into the batter
- Prepare a loaf tin by oiling it and then flouring it
- Add in the batter and pat a few times to settle the batter
- Pre-heat the oven at its highest temprature for 15 mins
- Bring the temprature to 150 degrees  and put the baking tin inside it
- Lower the temprature to 100 degrees after 10 minutes
- Turn the oven off after 25 more minutes
- Take the cake out of the oven
- Take the cake out of the baking tin and set it on a wire rack to cool

Serve warm with tea !!!

MILLION DOLLAR TIP : To Keep the cake moist put a metal bowl full of water in the oven beside the cake this keeps the moisture in the oven under controle and keeps the cake from drying out

The Most Amazing Green Chutney In The World















Ingredients :
- Fresh Coriander  1 Bunch
- Onion  1 Medium Sized
-The Juice of One Large Lemon
- Hot Green Chillies 3-4
- Ginger 1 inch piece
- Garlic 4-5 Cloves
- Cumin Seeds 1 Tbsp
- Coriander Seeds 1 Tbsp
- Sugar 1Tsp
- Salt To Taste
- A Pintch Of Black Salt
- Water 5tbsp



Method :
As Simple As It Can Get

- Put all the ingredients in a blender and blend till they form a smooth paste, this will take some time as there is very little liquid content in the chutney [This is important to achieve the desiered consistancy]

Desi Fried Fish

Ingredients :
1 kg Fish
3tbs Gram flour [Besan]
1 Ginger
4 cloves Garlic
1ts Carom seeds [Ajwain]
1ts Fenugreek [Kasoori methi]
 1 ½ ts crushed Red chilies
 3/4th ts Salt
 1/2ts Turmeric [Haldi]
 1 ½ ts whole Coriander
 1ts Cumin seeds
 1/3 cup lemon juice.





Method:
- Cut the fish into rather large cubes or fingers
- Rub the salt and turmeric on the fish
- Create a paste with the ginger, garlic and the lemon juice without adding any extra water then put in a  
  mixing bowl 
- Mix the whole seeds and the crushed red chillies and add to the mixing bowl
- Add the gram flour to the mixing bowl and mix all the ingredients well
- Add all the fish to the bowl and make sure that it gets completely coated in the batter
- Shallow fry until the fish is cooked and the coating is a light golden brown
MILLION DOLLAR TIP : Make Sure that there is just enough liquid in the mixure to help it get coated on the fish....too much water will make the batter runny and the fish will not gt coated properly

Serve With Green Chuttnee

Sweet And Sour Chicken




Serves 5-6 People

Ingredients:
[The Chiken And The Veggies Need To be Cut In Rather Large Cubes]

500 gms Boneless Chicken
2 Capsicums
2 Carrots
2 Onions
1 Small Tin Of Pine Apple
3 Crushed Cloves Of Garlic
1 Small Cauliflower [Optional]

Sauce:

The Juice From The Pineapple Tin
6 Tbsp Soy Sauce
2 Tbsp Vinegar
2 Tbsp Tomato Ketchup
2 Tbsp Sugar
1 Tbsp Black Pepper Powder
1 Tsp   Salt
1 Tbsp Corn flour


Method :

- Cut The Chicken And The Veggies Into Rather Large Cubes
- Add The Corn Flour To The Pineapple Juice and Whisk Until Smooth.....Then Add in the Rest of The 
  Sauce Ingredients and Mix Well
- Heat Oil In A Wok and Add In the Crushed Garlic
- Add In the Chicken and Stir Fry Until It Turns Light Brown
- Add In The Veggies and sStir Fry For Another 4 Mins
- Add In The Sauce Mix well and let it Thiken For About A Minute
- Serve With Plain Boiled Rice Or Fried Rice
