Date And Coffee Cake
Ingredients :
Butter-100 gms
Sugar-50 gms
Eggs-2
Coffee-3 Tbsp
All Purpose-Flour 100 gms
Vanilla Essance-1 Tsp
Dates-100 gms
[You Can Add Up To 100 gms of Sugar....I Like My Cake Lighly Sweetned]
Method:
- Pit the dates and soak them in hot water
- Mix the butter and sugar together in a bowl with your hands [ the butter has to be at room temprature for
this]
- Add the eggs one at a time to the butter and sugar mixture and beat well
- Add the ground coffee and sift in the flour
- Add the vanilla essance
- Drain the water from the dates ad fold them into the batter
- Prepare a loaf tin by oiling it and then flouring it
- Add in the batter and pat a few times to settle the batter
- Pre-heat the oven at its highest temprature for 15 mins
- Bring the temprature to 150 degrees and put the baking tin inside it
- Lower the temprature to 100 degrees after 10 minutes
- Turn the oven off after 25 more minutes
- Take the cake out of the oven
- Take the cake out of the baking tin and set it on a wire rack to cool
Serve warm with tea !!!
MILLION DOLLAR TIP : To Keep the cake moist put a metal bowl full of water in the oven beside the cake this keeps the moisture in the oven under controle and keeps the cake from drying out
